Mr. Savarin would likely change his view (Translation)

4 November 2010

Prague, 10. 27. 2010 - Today, the latest restaurant from the Pilsner Urquell Original Restaurant franchise project was inaugurated in downtown Prague on "Na Příkopě" street. It is located in the rear wing of Savarin Castle.

Once called Piccolomini Castle or Castle of Sylva-Taroucca, the castle that's now better known as Savarin Castle took its name from the Café Savarin, which was opened in the building in 1933. After that, its original names were soon forgotten. The castle was designed by renowned architect Kilián Ignác Dientzenhofer, and was erected in 1751.

"Our establishment ‘Kolkovna Savarin Castle' is a part of the Pilsner Urquell Original Restaurant project. Maintaining the quality of our draft beers, Pilsner Urquell lager in particular, is our primary goal. Aside from that, our guests will be able to enjoy a menu of unique Czech cuisine and world renowned specialties," says Jaroslav Herman, Restaurant Manager. "Our regulars are employees and owners of nearby offices and companies, but many international tourists also find their way to our restaurant to enjoy world renowned taste of Pilsner Urquell lager."

The "U" shaped courtyard where the new restaurant operates is an ideal place for a little garden restaurant.

The new establishment offers 250 seats. In addition to Pilsner Urquell lager, the draft beer selection also includes Velkopopovický Kozel dark beer, semi-dark Master, and alcohol-free Birell beer. The highlights of the menu are "Old Bohemian Platter Kolkovna" (half of a roast duck, a roast scrag, a selection of smoked meats, a homemade kielbasa, white and blue cabbage, and a selection of Czech dumplings) and roast pork knee with piquant pickled vegetables.

The Pilsner Urquell Original Restaurant (PUOR) is the brainchild of the Plzeňský Prazdroj company. It is a way for the company to introduce its lager in an atmosphere that is in accordance with the so-called "Czech beer culture". A traditional tap-bar with a copper cap (an exact replica of a beer brewing pan cap) situated right in front of the entrance is a dominant unifying feature of the restaurants. Solid wooden furniture, wooden wall siding, decor, and original tap-stands creates a pleasant ambiance appreciated by all guests. Interior decoration consists of loaners of originals and duplicates of exhibits from the Beer Brewing Museum in Plzeň. There are paintings, period pictures, certificates, notice boards, period regalia and artifacts which underline the rich tradition of beer brewing in the Czech lands and the prestige of the Pilsner Urquell brand.

"Besides other factors, location is one of the main aspects we focus on when looking for a place for a new restaurant for the Pilsner Urquell Original Restaurant project. Pilsner Urquell lager always deserves the best location and atmosphere, and our guests deserve nothing less. In the case of Savarin Castle, we did not hesitate a minute. It is a well exposed location in the pulsating heart of Prague, and yet it is separated from the noise of the city. Courtyard quarters offer an ideal space for a restaurant and a beer garden," says Vojtěch Kleisner, Manager of the Key Customers Dpt. of Plzeňský Prazdroj company, officially in charge of PUOR project.

In 1933, the entire castle took its new name from the Café Savarin. The Cafe itself was named after a famous French gourmand. Jean Anthelme Brillat-Savarin (1755-1826), one of the most famous gourmands, astrologers, and bon vivants is the author of many books (such as "Physiology of Taste") and quotations about food and good living. No wonder many restaurants, cafes, and dishes were named after him. He also set standards of table etiquette - his principles are still observed today. He is the author of the quotation: "The discovery of a new dish confers more happiness on humanity than the discovery of a new star."

"Had Mr. Savarin lived until 1842, he would certainly have extended his quote to include beverages as well," adds Václav Berka, Senior Brewster of Plzeňský Prazdroj company, referring so to the first gyle of Pilsen lager and its influence on world beer brewing. "He would certainly acknowledge the birth of a new beer, and he would certainly add a beer opener to his basic service set. Bottled beer is the first option after tap beer. Whether or not the beer is of the same quality, tap beer is more popular than beer in kegs, bottles or cans. Why? Its quality is improved by the care of professional bartenders, by the atmosphere, and by the company of friends who are there to make your beer experience even better."

Pilsner Urquell Original Restaurant is project of the Plzeňský Prazdroj company. Individual restaurants are privately owned and operated and their relationship with Plzeňský Prazdroj, Inc. is contract based. The Brewery is not a restaurant owner, it only permits the use of typical symbols, components and logos based on strict and clearly defined conditions. Legally, the owner is therefore in the same business relationship with the brewery as any other customer, partner, or other business subject.
